Sweet and Sour Chicken and Vegetables





1 and 1/2 cup mixed vegetables (I recommend carrots, zuchinni, red bell peppers and bean sprouts)
3/4 cup chopped and cooked chicken (about a medium chicken breast)
1/2 cup boiling water
3 tablespoons sugar
3 tablespoons cider vinegar
2 tablespoons cornstarch
3 tablespoons soy sauce
1/4 cup cold water

Pour the boiling water in a sauce pan and set to medium heat. Add the sugar and stir for a minute.
Now add the cider vinegar and leave it for a minute.
In the meantime, put the cornstarch, the soy sauce and the cold water in a bowl. Stir well and add it to the sauce pan.
Cook for about two minutes, stirring through the process. Add the vegetables.
After about seven minutes (check the vegetables are fully cooked), add the chicken so it absorves a bit of flavour.
Leave it for two minutes and then serve.
Makes 2 servings.
